This HACCP Level 1 & 2 training course combines both induction-level food safety training and the additional food safety skills expected of employees working with food beyond the first three months.
The course begins with HACCP Level 1 training which covers essential food safety knowledge for new food handlers. It then progresses to HACCP Level 2 training which introduces HACCP principles, hazard control, contamination prevention, monitoring procedures, and food safety responsibilities.
Suitable for new and experienced food handlers working in restaurants, cafes, catering businesses, retail food premises, and food production environments.
Learners complete structured video modules followed by a multiple-choice assessment. Upon successful completion, a HACCP Level 1 & 2 certificate is issued instantly.

Stage 1 — Before handling food
Employees must demonstrate basic food safety awareness before they begin handling food. This includes personal hygiene, safe food handling practices, and understanding contamination risks.
Stage 2 — Within 1 month of starting work
Employees must develop additional food safety skills within their first month. This includes maintaining hygiene standards, following safe food procedures, and understanding their responsibilities when working with food.
3–6 months (High-risk environments)
Employees working in high-risk food areas are expected to develop Level 2 food safety skills within 3 to 6 months.
6–12 months (Low-risk environments)
Employees working in lower-risk environments are expected to develop these skills within 6 to 12 months.
These timeframes are provided as guidance by the Food Safety Authority of Ireland (FSAI). Not all skills may apply to every employee, and in some cases additional time may be required depending on the role, experience level, and working environment. It is important that employees can demonstrate the required food safety knowledge and skills in practice. Employers should carry out a risk assessment to determine the appropriate training level and timeframe based on the specific duties and risks within their food business.
